Jacobs crackers aren't just for kids with these tasty recipes!

Okay so when I was researching a little bit about Jacobs to share some recipes with you guys I found out some pretty cool facts.  Like did you know the two guys William and Robert Jacob who created the savory biscuits were from Waterford?  I've lived in Waterford my whole life and never knew that so I thought that was pretty cool!  Jacobs crackers have been around since 1851 and growing up they became a staple in our house and still are today!

I thought it would be fun to share some quick and easy recipes with you guys that you will enjoy yourself!  Let me know in the comments below how you like to eat yours?




Haven't A Rashers

INGREDIENTS 
– The undisputed classic – 6 Jacob’s Cream Crackers!
– 6 crispy bacon pieces
– 70g of carrots
– 210g of shredded red cabbage
– 90g of spring onions
– 3 tablespoons of mayonnaise
– 1 tablespoon of wholegrain mustard
– 1 tablespoon of chives
– A pinch of ground black pepper and salt

You'll Need
– Mixing bowl
– Frying pan
– Grill
– Grater
– Knife
– Tablespoon
IT’LL MAKE
6 topped Cream Crackers
HERE’S HOW
RED CABBAGE SLAW
– Gather your spring onions and red cabbage and finely chop, before grating your carrots.
– Place the vegetables into a bowl before adding three tablespoons of mayonnaise & a tablespoon of wholegrain mustard to give your slaw that extra kick! Add a pinch of seasoning, and stir until you’re happy that the slaw is well mixed.
– And while you’re prepping your slaw, why not place your bacon on the grill to cook until golden brown!
– Now, our favourite part – topping time!
– Grab your Jacob’s Cream Cracker and place some bacon on to it.
– Carefully add a dollop of red cabbage slaw on top.
– Finally, finely chop some chives and sprinkle on your cracker creation.
I started using this recipe about four weeks ago and we have been making it every week since.  Its so delicious!  Its super quick and easy to make.  Its a great thing to make if you have someone calling over for a cuppa to just leave them there to nibble on instead of a chocolate digestive!

Tuna, Sweetcorn & Mayo
INGREDIENTS 
– The undisputed classic – 6 Jacob’s Cream Crackers!
– 1 tin of Tuna ( I prefer the chunks in brine)
– 1-2 Tablespoons of Mayo
– 2 Tablespoons of Sweetcorn
– A pinch of ground black pepper
YOU'LL NEED 
– Mixing Bowl
– 1 Tablespoon
– Serving Plate
IT’LL MAKE
6 topped Cream Crackers
HERE’S HOW
Tuna, Mayo & Sweetcorn Mix
– Take the Tuna first and squeeze out all the brine from the tin.  The tuna should look quite dry.  Then scoop out all the Tuna into your mixing bowl.
– To the bowl add your 1-2 tablespoons of mayo, 2 tablespoons of sweetcorn and your pinch of pepper.
– Mix it all together until the ingredients /(especially the mayo) are evenly spread throughout your mixture.
– Now topping time!
– Grab your Jacob’s Cream Cracker and scoop some of the mixture evenly onto each cracker.
– If you want to add something a little extra you can sprinkle some cheese on top too!  It tastes great!
